Easy Healthy Good spring meals
Its easy to design recipes with fresh seasonal vegetables & greens. Choose your favorites and play with mixes adding specialty spice blends you love. I don't keep a calorie count on dishes. Idea is to stay healthy and energized instead of focus on weight. That will happen naturally when you eat fresh.
This mix worked wonderfully as a meal after a day working in the garden. Play with options, make it fun. Serve with warm rice or couscous & rustic bread
Warm asparagus, tomato & olive salad ~ delicious & fresh

​Heat to boil enough water to cover your fresh cleaned & trimmed asparagus. Add a pinch of salt to water. Add asparagus, turn off heat. Let sit 5 minutes, drain water. Toss with a dash of olive oil and salt, set aside
Chop & Mix 4 Roma Tomatoes & 1/4 Cup Olives (any kind, I love kalamata) with juice of one lemon, olive oil, salt, pepper and fresh thyme, basil and/or parsley. Use your favorites from your herb garden or market, don't by budget or packaged herbs unless that is your only option.
Cut warm asparagus into bite-size pieces, toss with tomato mixture and serve.
Play with variations by adding avocado, cucumber, fresh zucchini or onion. Enjoy!
